Berry-Lemon Gummies

Perfect snack or dessert, I like them without sweetener.

Berry-Lemon Gummies


1/2 cup lemon juice
2 cups blueberries (fresh or frozen)
1-2 tbs raw honey or 1 tsp Stevita stevia (optional)
4 Tbsp Great Lakes grass-fed beef gelatin
Pinch of sea salt

1. Place lemon juice, sweetener (if using), salt and blueberries into high speed blender and mix until smooth. May add water to thin.
2. Add gelatin to the blender and blend at low speed to combine.
3. Pour mixture into molds, or a 9x9 glass dish, and refrigerate for at least 30 minutes.
4. Enjoy!

Lemon-Vanilla Fat Bombs

Pretty little bundles of fat satisfaction.

Lemon-Vanilla Fat Bombs


½ cup coconut butter
½ cup coconut oil
1 lemon juiced, including pulp
1 tbs honey OR 1 tsp stevia
Pinch sea salt
1 tbs vanilla
Pinch of turmeric (for vibrant color)

1. Put all ingredients in saucepan and heat on low until combined.
2. Place in blender and mix until smooth.
3. Pour into coconut oil greased molds and refrigerate until film, about 30 minutes.
4. Pop out of molds and enjoy!

Blueberry Cream Smoothie

An anti-oxidant and vitamin packed way to start the day! Tastes delish too :)

Blueberry Cream Smoothie

1 can full-fat organic coconut milk
2 cups organic wild blueberries (fresh or frozen)
1 avocado
1-2 cups steamed kale
1 tbs vanilla extract
1-2 tbs grass-fed collagen powder
Pinch of sea salt

1. Place all ingredients in high-speed blender, except collagen, and mix until smooth.
2. Add collagen and incorporate at low speed.
3. Enjoy!

Chicken, Sweet Potato and Kale Soup

Creamy, chunky, and oh-so satisfying :)

Chicken, Sweet Potato and Kale Soup
Serves 8-10 

 

Ingredients:
2 lbs cooked and shredded pastured, organic chicken
2-3 peeled and cubed sweet potatoes
1 large bunch kale, cleaned and ripped into pieces
3-4 cloves diced garlic
1 large diced onion
2-3 stalks diced celery
1 can full-fat organic, coconut milk
6 cups organic chicken or veggie broth (homemade best) 
1 tbs sea salt or to taste
Solid fat for sautéing (coconut oil, grass-fed tallow)

1   1.   In large stain-less steel pot, sauté onions and celery until soft.
     2. Add garlic and salt and sauté until fragrant.
     3. Add broth, chicken and sweet potato and cook until potatoes are tender, about 30-45 minutes.
     4. Add kale and coconut milk (and water if desired to “thin” soup).
     5. Cook until kale is soft.

     6. Serve and enjoy!

Berry Vanilla Tea Latte

Frothy, sweet, and oh so delicious. Makes me excited to wake up in the morning! :)

Berry Vanilla Tea Latte

2-3 cups hot, steeped green tea
1-2 tsp. vanilla powder or extract
2-3 Tbsp. grass-fed butter or grass-fed collagen powder
1/2 cup of your favorite berries
Pinch of sea salt

1. Put all ingredients in high-speed blender, excluding collagen, and mix on high until frothy.
2. Add in collagen and incorporate at low speed.
3. Serve and enjoy!

Herb Roasted Coconut Chips

Basic, delicious, and packed with good fat. Perfect as a snack or garnish and serve as a pretty little party app. 

Herb Roasted Coconut Chips

6 oz. plain, organic coconut chips
2 Tbsp. sage
2 Tbsp. rosemary
2 Tbsp. thyme
1 Tbsp. sea salt

1. Spread coconut chips onto baking sheet and toast at 350° F for 7-10 minutes or until golden brown.
2. Place in bowl and mix with seasonings, adjusting amounts to taste.
3. Garnish, serve and enjoy!

Healthy Hot Cocoa

Nothing beats a hot mug of cocoa on a cold winter's night. Here's my delish AIP friendly version :)

Healthy Hot Cocoa

2 cups brewed hot black tea (or organic coffee for mocha flavor)
1/4 cup cocoa powder (or carob for AIP)
2-3 Tbsp. coconut oil (AIP) or grass-fed butter
1-2 tsp. cinnamon powder
1 tsp. clove powder
2 tsp. vanilla extract
2 Tbsp. grass-fed collagen powder
Sweetener to taste: stevia, bee pollen, or grade b maple syrup

1. Place all ingredients in blender and mix at high speed until frothy.
2. Re-heat if desired.
3. Enjoy!
